good luck cookies

This morning I had my first of four final exams for the Winter 2012 semester at school. Know what that means? Summer vacation is less than a week away! Just three terrifying tests between me, and a nine day vacation to see my nieces!


But, how cruel is it that my first final is on Friday the 13th? We had such good weather this week I literally spent an entire afternoon crocheting adorable dishcloths on the porch. Bought a new dress, went to a bridal shower, played with my cat. Watched a LOT of True Blood, don't get me started. And then, last night I studied.

But, when I decided it was time to take a break i made a simple risotto for dinner, and used up the scraps of my baking supplies on these cookies. These cookies are phenomenal, everything you want out of an oatmeal chocolate chip. They're soft, gooey and perfect with milk.

After the clock rolled over to midnight it felt like all the evil friday the 13th bad luck, and this morning it really seemed like the day was out to doom me. But, after my allergies cleared up things didn't seem so bad! It was rainy and gloomy all morning, and now the sun is starting to shine, and I'm thanking these cookies.

 They're so good I hardly have any pictures, they were eaten up so quickly!

Good Luck Cookies

 Very simple recipe, can easily be doubled! The batch I made last night yielded 15 cookies, of course studying for finals means some cookie dough was eaten (raw eggs whatever.) The original recipe says it yields ~3 dozen

Butter or hard margarine (softened at room temperature)                                        1/2 cup
Brown sugar, packed                                                                                                                  1 cup
Large egg                                                                                                                                        1
Vanilla flavoring                                                                                                                         1/2 tsp
All-purpose flour                                                                                                                         1 cup
Quick rolled oats                                                                                                                         1 cup
Baking soda                                                                                                                               1/2 tsp
Salt                                                                                                                                                   1 cup
Semisweet chocolate chunks                                                                                                  1 cup
Chopped walnuts (optional)                                                                                               1/2 cup

1. Preheat oven to 350°F
2. Beat brown sugar, butter, egg, and vanilla on medium speed until smooth
3. Add rest of ingredients, stir with a spoon until completely mixed
4. Line a cookie sheet with parchment paper, drop teaspoonfuls onto the sheet. Leave ample room between them, the cookies like to melt and spread out.
5. Bake on centre rack for 10-12 minutes. I find that at 10 minutes they're still quite gooey and very lightly browned, once they cool they solidify a bit more, but are almost never dry or too crunchy!

The walnuts are totally optional, but totally worth it. I think they perfect the cookie.
